Creating yummy in the kitchen

 Just for a change, I got creative with making some slices. 

I adapted a Honey Muesli Bars recipe from the "Cakes and Slices Cookbook" produced by The Australian Women's Weekly. My variation turned out great and is absolutely delicious! 
If you love a gritty texture and slightly chewy, try this one. It's sweet enough for my taste. 

 
Ingredients
1/4 cup sesame seeds
2 cups untoasted muesli ( a nutty one with no dried fruit)
1 cup fruit and nut mix
1/2 cup shredded coconut
1/4 cup sunflower seed kernels
125g table margarine
1/3 cup honey
1/3 cup peanut butter
1/2 cup rice syrup

Grease a 19cm x 29cm lamington pan.
Toast sesame seeds under a griller for 5 mins.
Chop separately in a food processor each of the dry ingredients to medium fineness - muesli, fruit & nut mix, coconut, sunflower seeds. Combine all with toasted sesame seeds in a bowl. 
Combine margarine, honey, peanut butter and rice syrup in a saucepan, stirring over heat, without boiling until margarine is melted. Bring to the boil, reduce heat, simmer uncovered without stirring for 5 minutes. Stir into dry ingredients. 
Press into prepared pan, refrigerate until set before cutting.

In the same morning, I also made the Almond and Goji Brownies using Nicole Joy's recipe from her book "Why it's perfectly acceptable to eat dessert for breakfast". Highly recommended.
